Chicken Stir-Fry

Prep: 15 minutes

Cook: 30 minutes

Serves: Three



  • 500g chicken, diced  
  • One onion, chopped  
  • Three peppers, ideally one yellow, one red & one green, sliced  
  • 100g of roasted cashews  
  • 100 ml of soy sauce  
  • 30g of ginger Peeled  
  • Four bulbs of garlic  
  • Oil for frying  



  • Heat the oil in the wok and add chicken, cook for five minutes
  • Add the sliced peppers, onion, ginger and garlic to the wok and cook for a further five minutes  
  • Add the soy sauce
  • Cook until this reduces into a thick sauce   
  • Serve with rice and top with roast cashews
