Chicken Tikka Masala1

Serves: Four



  • 4 chicken breasts, diced  
  • 4 garlic cloves  
  • Thumb of ginger  
  • 400g tin of chopped tomatoes  
  • 200g yoghurt or coconut cream  (cream from the top of the coconut milk)  
  • 1 red chilli  
  • 1 diced onion  
  • 1 tbs masala paste   
  • 1tbs paprika  
  • 1 tbs turmeric  
  • 50g fresh coriander  



  • Combine the yoghurt or coconut cream with the chopped tomatoes and with the dry spices
  • Add the chicken to the yoghurt mix and leave to marinate in the fridge for at least 1 hour  
  • Heat oil in a large frying pan
  • Add onions, cook out until golden brown, stirring constantly
  • Add the ginger and garlic, cook for 1 minute
  • Add the chicken mix, including the sauce
  • Cook gently for 20 minutes
  • Serve with rice and garnish with chopped coriander
