Sweet and Sour Chicken

Serves: Two



  • 2 boneless and skinless chicken breasts   
  • Half a pineapple   
  • 1 onion   
  • 1 red, green and yellow pepper  


For the sauce   

  • 100 ml honey  
  • 200g tomato juice   
  • 50g ginger  
  • 2tbs dark soy sauce  
  • 4 shallots  
  • 3 splashes of tabasco   
  • 50ml white wine vinegar   



  • For the sauce: chop the ginger and shallots and place in a large saucepan to cook for about 5 min
  • Add the rest of the sauce ingredients. Cookout for about 15 min until the sauce is thick enough to coat a spoon
  • Dice the chicken, heat up a large pan and start cooking the chicken
  • While the chicken is cooking, cut the pepper, pineapple and onion into medium size cubes and add to the chicken
  • Cook out for another 5 min, add the sauce and cook out for further 5 mins
  • Serve with noodles or rice
